How to set up a 3-2-1 defensive formation, if you can only see 5-1 in "line-up setting), what players end up where in that formation? I'm asking on behalf of someone who can't speak English.
I think you are setting them the same way as 5-1. They will end up right then. The only option I can see.
choose 3-2-1 an you save it
then you go to "next game" see how fits your formation and if you do not like you go into "defense" and change of place to the players and so until you can accommodate your team.

the 5-1 positions represent the needed position skills of the defending players. that way you can be sure the right players are on the right position, even if you dont play 5-1
Ok, I have a question about 5-1 formation also, when defending is the pivot supposed to be on the 6m line and the central back the '1' trying to interrupt or the other way around? Also in 4-2 defence where is the pivot supposed to be and aren't there supposed to be two pivots? I thought the the formation while setting up lineup is just default and doesn't represent needed type of players for certain defensive formations.

Yep, thought the same in the beginning. But PPM is just a game, everything is not like irl. Look like they didn't wanted to include that in here
as far as i understood the player types also apply in defence formations and every defence formation contains the same player types. the central back is the 1 in 5-1

Well... I'm not sure why you go of-topic on my question. If I have something for a logo in a "working-progress-mode", it has nothing to do with the unrealistic game engine and the outcome in the linked game.
GE might be unrealistic, but playing the game for a half a season is not enough to be certain of your claim.
