While 3-6-1 isn't common, it's not unrealistic. What I would do is 3 defenders, 1 defensive (central) midfielder, 2 attacking (central) midfielders, 2 side midfielders and 1 striker. Or, switch the attacking and defensive mid if playing a more defensive lineup. I've used that myself a few times over the seasons.
Oops yeah, i meant 2 attack, 2 cm and 1 defensive mid.
