There has been a LOAD of testing on all this... 2-1-1 is considered the best ratio to work with.
Upgrading arena question:
If I am upgrading the capacity of an arena section (not the type of seating, but just the capacity of the seats), do I need to destroy the snack bars, etc. that are currently built in that section first?
If no, do those concession stands still provide profit while that area of the arena is under construction?

Not sure. I don't think you need to destroy your stands. Try just demolishing the capacity. And upgrading. See if you can do it without taking down the stands. If you can... cool!

Good. It was my assumption that the concessions do not need to be destroyed, but I should have verified it before beginning my plan.
They are lost everytime you want to upgrade (you get a 50% refund for them)
All the money pays out after the playoffs. So the player performance, playoff and season money all comes at the same time. Pretty sure that's the way it goes.

I thought we got our regular season money when the playoffs started.
Ya I'm pretty sure prize money for the regular season will go out tonight or at the latest tomorrow.
