Exactly! There are 105 players in my league's draft. I can only scout 35 of them! Chances are several players won't be scouted, especially 5/6 players.
hidden gem is an A-player who shows a lower rating (B to D). When he comes to your academy you will see that he is much better than anticipated.

The Draft-System is going to be a huge disappointment for non-pro-users. Any thoughts to let them at least sort the players so they don't have to be online saturday evening?
So, in theory then, hidden gems are less likely with better scouting since your scouts are more accurate. Or, are these gems specifically programmed to give a low rating but be good players?
they are specifically programmed to show low rating.
Wow. Now that's a curve ball. The question is now, how "low" is low. Perhaps I'll target "D" players in round 5 just for kicks 
What about A player from scouting. Will he be A player at the end?

depends on your scouting level. a max scouting level means 100% accuracy I think or close to it.

How many players should I see/be able to sciout in the draft (or what is the formula for determining how many players I should see)?
You can scout as many players per day as you have picks in the draft.
