I, like a lot of the higher teams, have a roster/lineup that only plays friendlies.
Weird. I beat a team that is almost twice as good as mine yet all 3 All stars belong to the losing team

How is it so many new teams have better OTR's than me? Its just SO UNFAIR 
It depends what league they were assigned to. You likely got the highest OTR team available to someone signing up from your region.
We're in the same league, Other WOrld III10 there were like 5 nonames and now they have teams and they're ALL better than me xcept for 1
In terms of OTR? Who was higher in the standings though?

Why can't I edit my stadium. I have over 2 Mio money but it says not enough for action (building fan-shop)

If you're trying to build a new stand you have to demolish what is there. If you're trying to build an accessory you need to check to see if you have any bids on players on the market. That'll tie up your funds.
