What do you think about a 3-4-3 formation? (More specifically a 3-1-2-1-2-1)
I've been using it for more than a season and has been good so far.

I'm not a big fan of 3 defenders personally.
a lot of teams only play with 1 or 2 strikers so i don't think you need 4 defenders all the time, especially if they don't have forward wingers.
I believe that too... sometimes u just need to have more players on offence, when the opposite team has 1 forward and many people on defence
I have some question... What do you think are the bests formations? The most common is probably 4-4-2 but i want to try different options... What about a formation made on three defenders such as 3-5-2/3-4-3? If i choose 3 defensers, i have to put all these defenser in the center or only one in the center??? Thank you!
If you choose just 3 defenders, you should put one in each side. Otherwise, you'll get a biiiiiiiig penalization... 
Ok so i have to use 4-4-2? Because sometimes i need to be offensive and i start to think about a new formation... If i need to be more offensive i should just change my 4-4-2 making more offensive the midfielders? Thank you!

you don't need to use only 4-4-2.. 3-5-2, 3-4-3, 4-3-3 and 4-5-1 are equally good tactics.. in some cases even 3-6-1 is a good choice, as well as 5-4-1

That means: No, you shouldn't put 3 defenders in the middle, just one.

Alternatively, you could try 2 center D and 1 on the wing.

Indeed, but you'd get a penalization as well
