Can someone explain how to set multiple formations and when they switch? I think I did it wrong for today's game

If I set formation 2 to "down by 3, whole match", at any point in the match I am down by three, the formation changes?
That is correct. But remember that you have to set it for both offence and defence.
Bingo. If you're down by <3 your formation 1 will return.

I wish there was a setting for it to not switch back.
For example, if I play my B team against you, and they aren't do so well, once they are losing by more than a certain margin, I want to put my A team out for the rest of the game.

I have him scouted already. Basically all training has gone into Shooting, some into Tech. Everything else is super low.
I would say he looks to be built as a dedicated Penalty shot taker, but he is getting 60m playing time in the few games i checked. It seems to be working for him, but I don't think its a lasting strategy. But hey, what do I know.

I started playing this week and I'm still a bit lost here. I would like to understand how the casting line of defense works.
Can I put different players in the defense of the attack? Example: Climb my offensive line based on the manual, observing the characteristics of each player. But for example, to climb on the defensive line a different player PF it is replaced the next attack? If yes, is it interesting? And in terms of counter-attack, he can enter the court replacing the defender?

Absolutely!
Players can play offensive and/or defensive positions. It is like lacrosse in that aspect. If you have players only play Off or only play Def they'll burn less energy *but* you won't be able to counter-attack and you'll be liable to surrender goals on the counter attack. So, strike a balance
